Perticaia has been producing high-quality wines for more than 20 years.
The winery is based in Montefalco (Umbria), an Italian region well-known to wine enthusiasts for its climate, characterised by very rainy cold seasons and very dry warm seasons, factors that favour the growth of excellent grapes.
In 2018, Perticaia winery’s founder decided to retire and handover to a new owner, a lover of top-quality wines and wine production, who is constantly seeking to increase the level of quality.
During the transitional phase, the cellar was visited by many experts to evaluate the products resting in the ageing rooms, and among these, the out-of-year wines that were expertly preserved, almost jealously guarded, aroused particular interest.
From the organoleptic and chemical assessment, as well as from documentary analysis, it emerged that the masses of wine present were closely linked to the local grape varieties of which only Montefalco is the custodian, and mainly from the 2014 and 2015 vintages.
Once their great quality was ascertained, a wine with a mysterious trait was assembled, a wine to all intents and purposes to be counted as ROFU - Private Collection –
But what is ROFU? The name ROFU comes from the deep roots of Umbrian history, from a time where the region had its own language: ancient Etruscan. In this language, ROFU meant “red”.

Harvest
Manual harvesting from mid september until mid october as per perticaia’s tradition.

Vinification
Long maceration on the skins. Vinification at controlled and constant temperature.

Ageing
Ageing in stainless steel for 36 months, ageing in oak barrels for 24 months before to refine at least 6 months in the bottle.

Ruby red colour turning to garnet hues.

Bouquet
Intense bouquet of well matured red fruits, pleasant hints of pepper and dark chocolate.

Taste
Strong and persistent, with an important and always balanced tannin, ending to fresh notes.

Serving suggestions
It’s going to match very well with spicy meats such as culatello and finocchiona. Excellent with well matured cheeses and tasty first courses such as lasagne or bucatini all’amatriciana.
